Vegan Carrot Cake Recipe
A classic Easter dessert, this vegan version of carrot cake is made with whole wheat flour, grated carrots, and a vegan cream cheese frosting. You can also add chopped nuts or raisins for extra flavor and texture.
- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon freshly grated nutmeg or ground nutmeg
- ¼ teaspoon salt
- ¼ cup coconut oil or vegan butter
- ¾ cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/3 cup unsweetened applesauce
- 2 tablespoons ground flaxseed meal
- ¾ cup almond milk (or other non-dairy milk)
- 2 cups melted shredded carrots(about 4 medium carrots)
- 1 cup chopped toasted walnuts or pecans (optional)
- Preheat the oven to 350°F and grease an 8” springform pan with coconut oil or vegan butter.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In another large bowl, combine the coconut oil or vegan butter with the sugar and beat until light and fluffy (about 2 minutes).
- Add in the vanilla extract and applesauce and mix well. Then add in the flaxseed meal and almond milk, stirring until combined.
- Gently fold in the grated carrots, followed by the dry ingredients. Mix until just combined (do not overmix).
- Gently fold in the walnuts or pecans (if using).
- Pour the batter into the prepared pan and spread it out evenly. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool before serving. Enjoy!
Note: This cake can be stored in an airtight container in the refrigerator for up to 5 days. It can also be frozen for up to 3 months.
Vegan Carrot Frosting
- 8 ounces vegan cream cheese
- 1/2 cup vegan butter, at room temperature
- 1 teaspoon vanilla extract
- 2 to 3 cups powdered sugar
- Nuts as desired
- In a medium bowl, using an electric mixer, beat the cream cheese and butter together until light and fluffy.
- Add the vanilla extract and beat again until combined.
- Slowly add in the powdered sugar, one cup at a time, beating until smooth after each addition.
- Add nuts as desired and spread the frosting on top of your cooled cake and serve! Enjoy!
Note: If you don’t have vegan ingredients, you can substitute regular cream cheese and butter for the vegan versions. You can also add different spices to the cake batter to change up the flavor (e.g., ginger, clove, allspice). Have fun with it! Enjoy!
This vegan quiche is made with a tofu filling that is flavored with nutritional yeast, turmeric, and herbs. You can add your favorite vegetables such as mushrooms, peppers, or tomatoes for extra flavor and nutrition.
- 1 9-inch pie crust
- 12 ounces extra firm tofu, drained and crumbled
- 2 tablespoons nutritional yeast
- ¾ teaspoon turmeric
- ½ teaspoon garlic powder
- 1 tablespoon chopped fresh parsley or other herb of your choice
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup of your favorite vegetables (mushrooms, peppers, tomatoes etc.)
- Preheat the oven to 350°F.
- In a medium bowl, combine tofu with nutritional yeast, turmeric, garlic powder, parsley, and a pinch of salt and pepper.
- Heat olive oil in a medium skillet over medium-high heat.
- Add the vegetable of your choice, season with salt and pepper, and cook for about 5 minutes or until vegetables are softened.
- Add the tofu mixture to the skillet and stir to combine.
- Place the pie crust in a 9-inch pie plate and spoon the tofu filling into it.
- Bake for 25 to 30 minutes or until the top is lightly browned and the center is firm.
- Let cool before serving. Enjoy!
Vegan Potato Salad
This vegan potato salad is a perfect side dish for any Easter meal. It is made with boiled potatoes, vegan mayonnaise, and a variety of fresh herbs such as parsley and chives. You can also add chopped vegetables such as celery or carrots for extra crunch and nutrition.
- 5 medium potatoes, washed and cut into small cubes
- 1/2 cup vegan mayonnaise
- 2 tablespoons fresh parsley, finely chopped

- 1 stalk of celery, diced (optional)
- 1 carrot, diced (optional)
- Salt and black pepper to taste
- Place potatoes in a large pot and cover with cold water. Bring to a boil over medium heat and cook until potatoes are tender, about 10 minutes.
- Drain the potatoes thoroughly and transfer them to a large bowl.
- Add vegan mayonnaise, parsley, chives and diced vegetables (if using) to the potatoes and stir until everything is evenly combined.
- Season with salt and black pepper to taste.
